Also known as agrumato in Italy, fused whole fruit olive oil is made by simultaneously crushing ripe olives with whole fresh fruits which have been picked at the peak of ripeness, sliced in half and then thrown in with the olives. This process allows the essential oils from the citrus peel to mingle with the oil from the olives.
